Tomato Cucumber Corn Salad

Serves:

4 People

Ingredients

  • 3 ears of corn, husked and shell from cob

  • 1 jalapeno, seeded and diced

  • 1 cup diced cucumber

  • 1 cup cherry or grape tomatoes, halved

  • 1/3 cup chopped red onion

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon sea salt

  • ½ teaspoon black pepper

  • 1/4 cup loosely packed chopped fresh cilantro

Steps

Toss all ingredients together in a medium bowl.


Chill for 10-15 minutes before serving and allow all flavors to absorb.
