Ingredients
2 Tbs. flaxseeds
½ cup chopped finely raw walnuts
1/3 cup water
1 tsp cinnamon
3-4 ripe, medium-large bananas
1/3 cup coconut sugar
1/3 cup coconut oil, melted
2 tsp. vanilla extract
1 ¾ cup flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. fine sea salt
Steps
Preheat oven to 350 degrees.
Line a loaf pan with parchment paper and grease with coconut oil.
In a large mixing bowl, mash bananas. Add water, coconut sugar, coconut oil, and vanilla extract. Using an electric mixer or whisk, beat until smooth and throughly combined.
Add in flaxseeds, walnuts, cinnamon, flour, baking powder, baking soda and sea salt. Fold all ingredients together until well mixed.
Transfer batter to the prepared loaf pan and smooth the top.
Bake for 40-45 minutes until the edges are golden. Use a toothpick to test that the center is fully cooked.
