Apple Protein Muffins

Serves:

12 muffins

Ingredients

  • 2 cups rolled oats

  • 1 apple, diced

  • 2 scoops Truvani vanilla protein powder

  • 4 eggs

  • 1 cup full-fat Greek yogurt

  • 2 tablespoons turbinado sugar

  • 2 tsp. cinnamon

  • 1/2 tsp. baking powder

  • Pinch kosher salt

Steps

  • Pre-heat oven to 350ºF.

  • Grease muffin tin with either butter or coconut oil

  • Whisk in eggs, protein powder and yogurt

  • Add in remaining ingredients. Once everything is combined, divide evenly amongst 12-muffins.

  • Bake for 20 minutes. 

  • Let cool and enjoy!
